Cold Weather Caulking

I am installing my vinyl replacement windows myself & they were just delivered. The temperature here in New Jersey is not expected to be much above freezing during the day in the foreseeable future. Can I caulk them in the cold? Must I use a special caulk? What do the pros do as far as caulking ...
