Just joined researching replacement windows in Florida

Hi all we are hoping to diy replacement windows as we redo our home. We are going to work on one room at a time redoing everything in there including windows then move on to the next room. Our house was built in the 80s and is stucco but to make it worse the windows openings are beveled all the way around so can't use the ones with the flange.
So we have come to the conclusion that we need pocket or block frame replacements.
But we are not sure how to choose a descent brand. We are not looking for top dollar ones just a decent a mid range window. We do not plan to stay in this house forever but right now we have the old single pane aluminum windows and they are not in very good shape.
Anyway just hoping to get some ideas of which brands to look at.
Would love to get some input from you on the brands you have had experience with and if and why you like them as well as why you do not if that applies.
Also is there anywhere we can go to learn all about diy replacement windows?
We love to find a dvd, book, you tube or site that would help us with this.
Appreciate any and all the input you all can share with us .
This is our first house and have A Lot to learn.
Also one last thing we are not in an area of Florida that has to have the high wind rated windows, already checked on that and got lucky with that one.

What is the wall construction? Is it CMU block, concrete, stick framed, etc?
